Pappagallino 40

NO. 1

OLIVE WASHED GIN FROM THE CHANNEL ISLANDS

AZURITE GIN

A blue gin, distilled with the sea’s essence and refined with Italian tradition.

An olive oil–washed gin shaped in the Channel Islands and refined with Italian Sabina olive oil.

Named after the deep blue mineral azurite, 'Azurite' reflects both the colour and clarity of the spirit it defines.

Azurite Gin is washed with premium Italian Sabina olive oil following distillation.
The oil is then removed, leaving a softer texture and subtle savoury depth.

Olive oil washing is not about flavour but refinement.
The process rounds the spirit, softening sharpness and creating a smooth, structured finish.

The result is a gin that excels in a martini while remaining perfectly balanced with tonic — composed, textural, and distinctive.

Once experienced, it becomes difficult to return to ordinary gin.

THE AZURITE STANDARD

Our Signature Martini - Only Stirred

Built on structure rather than garnish.

The olive wash integrates naturally with a classic Italian olive, creating a martini that feels complete — balanced, textural, and deliberate.

Recipe

  • 60ml Azurite Gin

  • 10ml Dry Vermouth

Stir over ice for 20–25 seconds until thoroughly chilled.

Strain into a well-chilled cocktail glass.

Garnish with one Italian olive.

Serve cold. Stirred. Uncomplicated.

THE AZURITE 1858

Our Classic Gin & Tonic

Named in honour of the year tonic water first entered popular use.

With quality tonic, the olive wash softens bitterness and extends the finish while juniper and citrus remain clearly defined.

Recipe

  • 50ml Azurite Gin

  • 120ml Quality Tonic Water

Build over large, clear ice in a chilled glass.

Express a strip of grapefruit peel over the drink and garnish with a wedge of cucumber.

Serve cold.

Bright. Enduring.

LIMITED EDITION

The first expression of Azurite Gin.

For the first distillation of Azurite Gin, a single 25-litre run produced just 50 numbered bottles worldwide.

Each bottle is hand-filled, labeled, and individually numbered, reflecting the precision and care of every stage of its creation.

This Launch Edition preserves the unique character of the 2025 batch — a discrete, collectible expression of Azurite Gin, distilled to exacting standards and crafted for those who appreciate subtlety, texture, and refinement.

Azurite Gin will continue in ongoing production, each batch crafted with the same recipe and olive-washing refinement.

Still, the 2025 Launch Edition stands as a collectible legacy — the very first expression of Azurite Gin,
destined to remain irreplaceable.

Reserve Your Numbered 2025 Legacy Bottle

After the 2025 Launch Edition closes, Azurite will be available for purchase online in our standard batch.

The House of Vietato

Custodian of Pappagallino 40

Vietato Limited is a Jersey-based spirits company and custodian of the Pappagallino 40 trademark, founded and led by a CEO of Italian and English heritage, with its spirits crafted in collaboration with a respected Channel Islands distillery.

Rooted in the Channel Islands and inspired by Italian tradition, our work blends maritime clarity with Mediterranean depth. This dual heritage shapes every bottle, guiding the structure, texture, and precision of our olive oil–washed distillations.

For our first 2025 Launch Edition, production was deliberately small — just 50 numbered bottles — preserving the collectible nature and craft integrity of Azurite Gin.
Future batches will follow the same recipe, colour, and olive-washing refinement, making the spirit consistently exceptional while honouring its origin.

At Vietato Limited, we prioritise quality and craftsmanship over scale, creating gin that is precise, composed, and built to reward those who appreciate subtlety, texture, and balance.
